By popular demand...

Apparently we aren't the only ones who look back on the BYU chocolate mint brownies with many a fond memory. The demand became great enough that they have posted the recipe in the alumni area of the BYU website, which I have reproduced here for your convenience.














Sugar-n-Spice, Cougareat Food Court

MAKES ONE 9-BY-13 PAN OF BROWNIES.
PREP AND COOK: 90 min. COOL: 1 hr.

1 c. margarine
1/2 c. cocoa
2 Tbsp. honey
4 eggs
2 c. sugar
1 3/4 c. flour
1/2 Tbsp. baking powder
1/2 tsp. salt
1 c. chopped walnuts
12 oz. chocolate icing (Use your own icing recipe or purchase some chocolate frosting. You can also search the Internet for chocolate icing recipes.)

MINT ICING

5 Tbsp. margarine
dash of salt
3 Tbsp. milk
1 Tbsp. light corn syrup
2 1/3 c. powdered sugar
1/2 tsp. mint extract
1-2 drops green food coloring

1. Melt margarine and mix in cocoa. Allow to cool. Add honey, eggs, sugar, flour, baking powder, and salt. Mix well. Add nuts. Pour batter into a greased 9-by-13 baking pan. Bake at 350 degrees for 25 minutes. Cool.

2. Prepare mint icing: Soften margarine. Add salt, corn syrup, and powdered sugar. Beat until smooth and fluffy. Add mint extract and food coloring. Mix. Add milk gradually until the consistency is a little thinner than cake frosting.

3. Spread mint icing over brownies. Place brownies in the freezer for a short time to stiffen the icing. Remove from the freezer and carefully add a layer of chocolate icing.

Banana Cream Cheescake

I made this for Todd's farewell. It was in the Kraft Foods magazine, which I love, love, love.

1 pkg. (2-layer size) white cake mix, divided
4 eggs, divided
3 Tbsp. oil
2/3 cup packed brown sugar, divided
2 bananas, sliced
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
2 Tbsp. lemon juice
1-1/2 cups milk
1-1/2 cups thawed COOL WHIP Whipped Topping

Heat oven to 300ºF. Reserve 1 cup dry cake mix. Mix remaining cake mix with 1 egg, oil and 1/3 cup sugar with mixer. (Mixture will be crumbly.) Press onto bottom and 1 inch up sides of greased 13x9-inch baking pan; top with bananas.

Beat cream cheese and remaining sugar with mixer. Add reserved cake mix, remaining eggs and lemon juice; beat 1 min. Blend in milk. (Batter will be very thin.) Pour into crust.

Bake 45 to 50 to min. or until center is almost set. Cool. Refrigerate 4 hours. Top with Cool Whip. Refrigerate leftovers.

Maple Pork Chops

So I got this recipe off of the food network channel that I watched while doing that stupid glucose test with pregnancy. I know that the ingredients sound like they don't go together, but we just made it tonight and it was soooo good.

Ingredients:
Pork chops (obviously. I used 4)
salt and pepper
1 c. maple syrup
2 tbsp. mustard
2 cloves garlic
1/4 tsp ground ginger

Thaw pork chops completely. Salt and pepper both sides. Brown the meat in oil in a frying pan. Mix remaining ingredients and pour over meat. Continue to cook until pork is done and sauce has thickened.

The show cooked it with brusselsprouts, but many people don't like those so we cooked them with carrots and the sauce even tasted good on the cooked carrots. But do what ever you like.

Bread and Butter Pickles

1 large or 2 medium gherkin cucumbers, thinly sliced
1 medium onion, thinly sliced
1 c. sugar
1/2 c. vinegar (white or brown)
1 tsp. salt
1/2 tsp. mustard seed
1/4 tsp. celery seed
1/4 tsp. turmeric powder

Mix all the ingredients together in a 2 qt. microwavable bowl. Stir and cover. Microwave for 5 min. and stir (careful not to burn yourself). Then microwave for another 5 min and let sit for 2 min. Place in jar and let cool. Refridgerate.

These are my favorite kind of pickles to eat. My next door neighbor just told me how to make some and they are so good. You really should try them. The seeds can usually be found at the dollar store in big containers so it isn't as expensive. But you will have to get the turmeric powder from the grocery store and it is a little pricey but will last you a long time.

Pazookies

I stole this one from Aunt Nancy but adapted it to my own (or my husbands) wants.

Needed:
Chocolate Chip Cookie Dough
Vanilla Ice Cream
Hot Fudge or other drizzle toppings you like
Whipped Cream if desired

Cook cookie dough either in a mini pie tin or upside down over a muffin tin to make a cup.

When cool, put ice cream either on top of or inside of chocolate chip cookie.

Drizzle hot fudge on top then top with whipped cream.

Scarf!

Quiche Lorraine

10 slices bacon, fried crisp and crumbled
1 partially baked pie crust
4 eggs
2 c. light cream (I use milk)
1/2 tsp. salt
1/8 tsp. nutmeg
pinch of pepper
1 1/4 c. grated Swiss cheese

Preheat the oven to 425ºF. Sprinkle the crumbled bacon over the bottom of the tart shell. Combine the eggs, cream, salt, nutmeg and pepper in a bowl and beat to mix thoroughly. Sprinkle the cheese over the bacon and ladle the custard over all. Bake for 15 minutes at 425º; then lower the heat to 350º and bake for 30 minutes more, or until a knife inserted in the center comes out clean.

This is from a recipe book of mine, but Grandma probably has a better recipe.

Looking for a good recipe

Does anyone have a good recipe for quiche? I am really wanting some (call it a weird pregnancy craving) but I can't find any of my good recipes that I got from family. So if anyone has a good one, let me know.
