Blueberry Lemon Muffins

This recipe is courtesy of Sisters' Cafe, an awesome recipe blog site.

2 c. flour
1/2 c. sugar
3 tsp. baking powder
1/2 tsp. salt
zest of one lemon
1 egg
1 c. milk
1/2 c. butter (not margarine)
1 c. frozen blueberries

Mix dry ingredients and set aside. Beat eggs, milk, butter and lemon zest. Add dry ingredients and stir gently to combine. Stir in blueberries. Bake at 375ยบ for 20-25 minutes.

Topping:
1/4 c. butter, melted
1 Tbsp. lemon juice
sugar

Combine butter and lemon juice. While the muffins are still warm, dip the tops in the butter and lemon juice mix and then dip in sugar. Makes about 12 muffins.

Pico de Gallo Pilaf

This is a recipe Maelen and I saw on Rachel Ray and had to try. It is fantastic!

1 Tbsp. extra-virgin olive oil
1/2 c. orzo pasta
1 c. white rice
2 c. chicken broth or vegetable broth
4 plum tomatoes, finely chopped
1 small onion, red or white, finely chopped
1 jalapeno pepper, seeded and finely chopped
A handful of cilantro leaves, finely chopped
1 lime, zested and juiced
salt

Heat the olive oil in a sauce pot over medium heat. Add the orzo and toast until deep golden. Stir in the rice and broth and bring to a boil. Reduce the heat to low, cover the pot and simmer for 17-18 minutes. In a small bowl, combine the tomatoes, onions, jalapeno, cilantro and lime zest and juice. Season with salt, to taste. When rice is cooked, fluff with fork and stir in the salsa.

**I can't eat anything too spicy, so I made without the jalapeno and it was very yummy.

White Chocolate Peanut Butter Drops

Here is the recipe from the wonderful treats my Susie made for Kendall's baptism:

1 lb. white chocolate chips, melted
(In microwave, use half heat, mix and stir every minute)
1/2 c. chunky peanut butter (mix in with warm white chocolate)

Stir in with warm mixture:
1/2 c. miniature marchmallows
1 c. roasted peanuts (dry roasted are fine)
2 c. rice krispies

Mix all together and drop by large tablespoons onto foil or wax paper. Let cool at room temperature, or put in refrigerator.

Ginger Peanut Chicken Wraps

This is something you will definitely want to try if you like Thai food. It is so good.

Peanut Ginger sauce:
1 1/2 T sugar
1 T minced fresh ginger (I used bottled)
3 T lime juice
1 T low sodium soy sauce
1/4 tsp salt
1/4 tsp ground red pepper
1 garlic clove crushed (I normally use garlic powder-about 1-2 tsp)
1/4 cup peanut butter
2 T water

Put everything in a blender or food processor except peanut butter and water and process until smooth. Add peanut butter and water and process until smooth.

1 cucumber peeled and chopped into chunks
3/4 cup chopped red bell pepper
Cooked cubed or shredded chicken (however much you think your family eats)
Bagged shredded cabbage-coleslaw mix
Wheat tortillas (white work too)

Warm tortillas and assemble taco style. Pour sauce over before closing wrap. We also like to use ranch dressing with the peanut dressing. I love these, hopefully you all will too. Enjoy :)

BBQ Chicken Salad

Let me tell you this dinner is definitely worth trying once. I absolutely loved it and so did Eric. Even Porter ate a whole bunch of chicken which he normally doesn't do.

Ingredients:

1/2 head iceberg lettuce chopped
romaine lettuce chopped
1 cup frozen white corn- rinse under cold water, or fresh corn if in season:)
1 can black beans- drain & rinse
2 cups pepper jack cheese, shredded
2 medium diced tomatoes
1-2 avocados chunked
drizzle 1/2 lime over to prevent from browning

Ranch Dressing:
1 cup buttermilk
1 cup mayo
1 package Hidden Valley ranch mix
1/4 cup cilantro

BBQ Chicken:1 hour before, marinade 2 pounds chicken tenders in
1/4 cup olive oil,
1/4 cup soy sauce,
1 tsp minced garlic,
1/2 tsp salt & pepper.

Place chicken on broiler pan and broil 4-6 minutes per side. Let cool then dice in cubes,then toss with 1/2 cup bbq sauce of your choice! (I LOVE Sweet Baby Rays) On large platter, layer lettuces, corn, black beans, cheese & tomatoes. Top with warm bbq chicken and avocados!Serve with ranch dressing, garlic bread or HOME MADE ROLLS!

Bulgogi

Eric's dad served his mission in Korea and gave us this recipe. It is so good!

5 Tbsp soy sauce
1/4 c. brown sugar
1 tsp black pepper
2 Tbsp sesame oil
1" fresh ginger root, diced
1 large onion
3 cloves garlic

combine all ingredients and put in ziploc bag with beef cut into strips.(I used one package of sirloin strips) Marinate meat overnight.
Brown meat in a small amount of oil. Do not cook all the way. Place in crockpot for 3 hrs on high. One hour before done, cut up a leek and stir into meat mixture. Serve over rice.
